White Mamertino Di Milazzo Doc

The Mamertino is a white wine that Mimmo Paone obtains from vineyards located 300 meters above sea level in the municipality of Condrò. These vineyards are rich in both clay and sand, which prevent the leaching of nutrients and avoid water stagnation.

 

With adequate hydration, the Inzolia, Catarratto, and Grillo grapes produce translucent white berries. They undergo alcoholic fermentation in stainless steel tanks, followed by aging in the same tanks for approximately 6 months to preserve their freshness and immediacy.

 

Mimmo Paone, through his white Mamertino, aims to showcase an easy and enjoyable side of Sicily. It embodies simplicity of intention and instant clarity.

 

With a straw-yellow color and greenish nuances, it offers an aromatic range that combines the citrus fruits of Sicily's land, floral hints of broom intertwined with aromatic herbs, and a savory quality that entices tasting.

 

On the palate, it confirms its smooth and round nuances alongside the refreshing fruitiness reminiscent of almost ripe plums.

 

It pairs excellently with local grilled or baked fish dishes, spaghetti with seafood, as well as white rabbit meat.

The white Mamertino di Milazzo has a chromatic intensity that reflects the employed grape varieties, appearing young with a pale straw yellow hue.

 

On the nose, it is clean, fresh, and intense, with floral and citrusy notes of lemon and orange. It exhibits a fruity character with a slight hint of tropical fruits like pineapple and mango, along with mineral notes that linger pleasantly.

 

In the mouth, it is clean and precise, with a pronounced citrusy character. It is fresh and mineral, with a slightly bitter but enjoyable aftertaste that invites further sipping.

 

It pairs well with fish-based dishes, tuna and marinated shrimp crudités, shellfish, and seafood pasta.
